Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 (10 oz) can Rotel, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 8 large flour tortillas
  • Cooking spray
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro

Instructions

  1. Preheat the oven to 425°F. Lightly spray a large sheet pan with cooking spray.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  3. Add taco seasoning and water to the beef, stirring until well combined. Simmer for a few minutes.
  4. Stir in the Rotel and black beans. Remove from heat.
  5. Place 6 tortillas overlapping each other on the prepared sheet pan, allowing half of each tortilla to hang over the edge.
