Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp milk
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped chives
  • 4 slices cooked bacon, crumbled

Instructions

  1. Preheat the air fryer to 400°F.
  2. Scrub the potatoes clean and dry them thoroughly.
  3. Rub each potato with olive oil and place them in the air fryer basket.
  4. Air fry for 35-40 minutes until fork-tender.
  5. Allow potatoes to cool slightly, then cut each in half lengthwise.
  6. Scoop out the insides, leaving a thin layer of potato attached to the skin.
  7. In a bowl, mash the scooped-out potato with sour cream, butter, milk, garlic powder, salt, and pepper.
  8. Stir in half of the cheese and half of the bacon.
  9. Spoon the mixture back into the potato skins and top with remaining cheese.
  10. Return to the air fryer at 350°F for 5-7 minutes until cheese is melted and bubbly.
  11. Garnish with chives and remaining bacon before serving.
