Ingredients
For the Crust
1 1/2 cups walnuts, finely ground
1/4 cup unsweetened cocoa powder
1/4 cup maple syrup
1/2 tsp salt
For the Filling
2 ripe avocados, peeled and pitted
1 (8 oz) package cream cheese, softened
1/2 cup honey
1 tsp vanilla extract
1 tbsp fresh lime juice
1/2 cup coconut cream
For the Topping
1/2 cup whipped cream
Lime zest, for garnish
Crushed walnuts, for garnish
Instructions
Prepare the Crust
In a bowl, mix ground walnuts, cocoa powder, maple syrup, and salt until combined.
Press the mixture firmly into the bottom of a greased 9-inch springform pan.
Refrigerate for 30 minutes to set.
Make the Filling
In a blender, combine avocados, cream cheese, honey, vanilla extract, lime juice, and coconut cream.
Blend until smooth and creamy.
Pour the mixture over the chilled crust and spread evenly.
Chill and Serve
Refrigerate the cheesecake for at least 4 hours, or until set.
Top with whipped cream, lime zest, and crushed walnuts before serving.
