Ingredients

  • 2 slices hearty whole-grain or sourdough bread, toasted
  • 1 ripe avocado
  • 2 ounces fresh goat cheese, crumbled
  • 2 ounces smoked salmon
  • 2 teaspoons capers, rinsed and drained
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, for drizzling (optional)

Instructions

  1. Lightly toast the slices of bread until golden and crisp.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth.
  3. Spread a generous layer of mashed avocado over each slice of toast.
  4. Top with crumbled goat cheese, followed by slices of smoked salmon.
  5. Sprinkle capers on top and finish with a crack of black pepper.
  6. Drizzle with a touch of olive oil if desired. Serve immediately.
