Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp Sriracha
  • 1 tsp honey
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup green onions, chopped
  • 2 tbsp vegetable oil for frying
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss the chicken pieces with cornstarch until evenly coated.
  2. Heat vegetable oil in a pan over medium-high heat and fry chicken until golden brown and crispy. Remove and set aside.
  3. In a separate bowl, mix mayonnaise, sweet chili sauce, Sriracha, honey, soy sauce, garlic, salt, and pepper to create the sauce.
  4. Toss the fried chicken in the sauce until evenly coated.
  5. Garnish with green onions and serve over cooked rice.
