Ingredients

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 2 tbsp fresh lime juice
  • 2 green onions, sliced (optional)
  • Chopped parsley or cilantro, for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, and lime juice. Set aside.
  3. Season shrimp with garlic powder, salt, and pepper.
  4. Heat olive oil in a skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, or until pink and opaque.
  5. Toss cooked pasta with the sauce until well coated.
  6. Gently fold in the cooked shrimp. Serve warm, garnished with green onions and parsley or cilantro if desired.
