Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 small onion, diced
  • 2 celery ribs, diced
  • 3 medium carrots, diced
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 3 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 batch butter swim biscuit dough (or store-bought biscuit dough)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large oven-safe skillet or Dutch oven, melt butter over medium heat.
  3. Add onion, celery, and carrots. Cook until softened, about 5–7 minutes.
  4. Sprinkle in flour and stir continuously for 1–2 minutes to form a roux.
  5. Gradually whisk in chicken broth and milk until smooth.
  6. Season with salt, pepper, garlic powder, and thyme. Simmer until thickened, about 5 minutes.
  7. Stir in shredded chicken and peas, mixing until evenly distributed.
  8. Prepare biscuit dough according to recipe or package instructions and spread evenly over the filling.
  9. Bake for 25–30 minutes, or until biscuits are golden brown and cooked through.
  10. Let rest for 5 minutes before serving.
