Ingredients

  • 6 mini bagels, sliced in half
  • 6 large eggs
  • 6 slices cooked bacon
  • 6 slices cheddar cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh chives, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt butter and scramble the eggs until just set. Season with salt and pepper.
  3. Place the bottom halves of the bagels on a baking sheet.
  4. Top each with scrambled eggs, a slice of cheese, and a slice of bacon.
  5. Cover with the bagel tops.
  6. Bake for 5–7 minutes until the cheese melts and the bagels are warm.
  7. Garnish with chopped chives if desired and serve immediately.
