Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, mix shredded chicken, buffalo sauce, cream cheese, cheddar, garlic powder, onion powder, salt, and pepper until well combined.
Unroll crescent dough and separate into triangles. Place 1 heaping tablespoon of filling onto the wide end of each triangle.
Roll the dough around the filling and pinch edges to seal.
Place on the baking sheet, brush tops with beaten egg.
Bake for 13–15 minutes or until golden brown.
Garnish with green onions or parsley if desired. Serve warm with ranch or blue cheese dip.
