In a bowl, toss the shredded chicken with buffalo sauce until fully coated.
Place the flatbreads on a baking sheet and top each with buffalo chicken.
Sprinkle with mozzarella cheese and blue cheese crumbles if using.
Bake for 8–10 minutes or until cheese is melted and bubbly.
Remove from oven, top with green onions, drizzle with ranch or blue cheese dressing, slice, and serve.
