Ingredients

  • 1 tablespoon olive oil
  • 14 ounces smoked sausage, sliced
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 8 ounces penne pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced sausage and cook until browned, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, add diced onion and bell pepper. Sauté until softened, about 4 minutes.
  4. Stir in minced garlic, Cajun seasoning, salt, pepper, and tomato paste. Cook for 1 minute.
  5. Add pasta, chicken broth, and heavy cream. Stir to combine.
  6. Bring to a boil, then reduce heat and simmer uncovered for 12-15 minutes, stirring occasionally, until pasta is al dente.
  7. Stir in cooked sausage and parmesan cheese. Mix well until cheese is melted and everything is combined.
  8. Garnish with chopped parsley and serve hot.
