Ingredients

  • 2 cups cooked sushi rice
  • 2 tsp rice vinegar
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/2 lb imitation crab meat, chopped
  • 1 avocado, diced
  • 1 cucumber, diced
  • 1 sheet nori, cut into strips
  • 1 tbsp toasted sesame seeds
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha (optional)
  • Soy sauce, for serving

Instructions

  1. In a bowl, mix warm sushi rice with rice vinegar, sugar, and salt. Let cool.
  2. In a small bowl, mix mayonnaise and sriracha to make spicy mayo.
  3. Divide the seasoned rice between two bowls.
  4. Top each bowl with imitation crab, avocado, cucumber, and nori strips.
  5. Sprinkle with toasted sesame seeds.
  6. Drizzle with spicy mayo and serve with soy sauce on the side.
