Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 box (7.4 oz) apple cider drink mix (10 packets)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 3 cups all-purpose flour
  • 1 (14 oz) bag soft caramel candies (like Kraft), unwrapped and halved

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, sugar, salt, and apple cider drink mix until light and fluffy.
  3. Add eggs and vanilla; mix until combined.
  4. In a separate bowl, whisk together baking soda, baking powder, cinnamon, and flour.
  5. Gradually add dry ingredients to wet ingredients and mix until dough forms.
  6. Scoop dough into tablespoon-sized balls, flatten slightly, and place half a caramel candy in the center. Wrap dough around caramel to seal.
  7. Place on baking sheet 2 inches apart. Bake 12-14 minutes, or until edges are lightly golden.
  8. Cool on pan for 5 minutes, then transfer to wire rack.
