Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts, diced
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 8 oz penne pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish and set aside.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, garlic powder, and paprika. Cook until browned and fully cooked.
  4. In a saucepan, melt butter. Whisk in flour and cook for 1 minute. Slowly add milk, whisking constantly until smooth and thickened.
  5. Stir in mozzarella, parmesan, and Italian seasoning until melted and creamy.
  6. Combine cooked pasta, chicken, and cheese sauce in the baking dish. Mix well.
  7. Bake for 20 minutes until bubbly and slightly golden on top.
  8. Garnish with parsley and serve hot.
