Ingredients

  • 2 large zucchinis, sliced lengthwise
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Brush zucchini slices with olive oil and sprinkle with minced garlic, salt, and pepper.
  3. Bake for 10 minutes, then remove from the oven.
  4. Top each zucchini slice with mozzarella, Parmesan, and Italian seasoning.
  5. Return to the oven and bake for another 5-7 minutes until cheese is bubbly and golden.
  6. Garnish with fresh parsley before serving.
