Ingredients

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon butter
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 teaspoon paprika
  • Chopped fresh parsley for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the diced potatoes and cook until golden and tender, about 8-10 minutes.
  3. Stir in the diced onions and bell peppers, cooking for another 2-3 minutes until softened.
  4. In a bowl, whisk together eggs, milk, salt, pepper, garlic powder, onion powder, and paprika.
  5. Pour the egg mixture over the cooked potatoes and veggies, stirring occasionally until eggs are fully cooked.
  6. Sprinkle shredded cheddar cheese on top and let it melt.
  7. Garnish with chopped parsley and serve hot.
