In a large bowl, toss the halved potatoes with olive oil, garlic powder, salt, pepper, and smoked paprika.
Spread the potatoes evenly on a baking sheet, cut side down.
Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Remove from oven, sprinkle cooked bacon and shredded cheese over the potatoes.
Return to oven for 5 minutes, or until cheese is melted and bubbly.
Garnish with fresh parsley before serving.
