Ingredients

  • 2 lbs baby potatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, salt, pepper, and smoked paprika.
  3. Spread the potatoes evenly on a baking sheet, cut side down.
  4. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  5. Remove from oven, sprinkle cooked bacon and shredded cheese over the potatoes.
  6. Return to oven for 5 minutes, or until cheese is melted and bubbly.
  7. Garnish with fresh parsley before serving.
