Ingredients

  • 4 large potatoes, peeled and chopped
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup chopped chives (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 1 tablespoon oil (for frying)

Instructions

  1. Boil the potatoes until fork tender, then mash with butter, salt, pepper, garlic powder, and paprika until smooth.
  2. Add flour and chives to the mashed potatoes and mix until combined.
  3. In a bowl, mix mozzarella and cheddar cheese together for the filling.
  4. Take a portion of the potato mixture, flatten into a patty, add cheese filling in the center, and seal with more potato mixture.
  5. Form into round cakes and flatten slightly.
  6. Heat oil in a pan over medium heat and fry the potato cakes until golden brown on both sides.
  7. Serve warm and enjoy!
