Ingredients

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 tsp Italian seasoning
  • 1 cup fresh spinach
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the gnocchi according to package instructions, then drain and set aside.
  3. Heat olive oil in a large oven-safe skillet over medium heat. Season the chicken with salt and pepper, then cook until golden brown and fully cooked, about 5-7 minutes.
  4. Add the garlic and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring to combine.
  6. Stir in Parmesan cheese, Italian seasoning, and spinach. Cook until the spinach wilts and the sauce thickens slightly.
  7. Add the cooked gnocchi and toss to coat evenly in the sauce.
  8. Top with shredded mozzarella cheese.
  9. Transfer the skillet to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley and serve hot.
