Ingredients

  • 1 lb pork tenderloin, thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium zucchini, halved and sliced
  • 1/2 small red onion, sliced
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon vegetable oil
  • Toasted sesame seeds for garnish
  • Chopped green onions for garnish
  • Cooked white rice for serving

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and cornstarch. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add pork slices and cook until browned. Remove and set aside.
  3. Add vegetable oil to the pan. Stir-fry bell peppers, zucchini, and red onion for 3-4 minutes until tender-crisp.
  4. Add garlic and ginger, cooking for another 30 seconds until fragrant.
  5. Return pork to the pan. Pour in the sauce and stir until everything is well coated and sauce thickens.
  6. Serve hot over rice, garnished with sesame seeds and green onions.
