Ingredients

  • 1 (15 oz) can of chickpeas, drained and rinsed
  • 2 tbsp tahini or plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 celery stalk, finely chopped
  • 2 tbsp red onion, finely chopped
  • Salt and pepper to taste
  • Whole grain or sandwich bread
  • Lettuce or spinach leaves (optional)
  • Tomato slices (optional)

Instructions

  1. In a medium bowl, mash chickpeas with a fork until mostly smooth, leaving some chunks.
  2. Add tahini (or yogurt), Dijon mustard, vinegar, chopped celery, and red onion.
  3. Mix until well combined and season with salt and pepper to taste.
  4. Toast your bread slices if desired, then layer with lettuce, tomato, and generous scoops of the chickpea salad.
  5. Top with the second slice of bread and enjoy immediately.
