Heat vegetable oil in a large skillet over medium heat.
Add garlic and ginger, sauté for about 30 seconds until fragrant.
Push to one side of the pan and pour in the beaten eggs, scrambling until cooked.
Add diced chicken and vegetables, stirring for 2-3 minutes until heated through.
Stir in the cooked rice, soy sauce, and sesame oil, mixing well.
Continue to stir-fry for another 3-4 minutes until everything is well combined.
Season with salt and pepper to taste and garnish with green onions before serving.
