Ingredients

For the Dough

  • 200 g (1 2/3 cups) all-purpose flour
  • 30 g (1/4 cup) unsweetened cocoa powder
  • 1 tsp baking powder
  • 100 g (1/2 cup) granulated sugar
  • 1 pinch of salt
  • 1 large egg
  • 100 g (7 tbsp) unsalted butter, cold and cubed

For the Filling

  • 500 g (2 cups) low-fat quark or well-drained Greek yogurt
  • 200 g (7 oz) cream cheese
  • 120 g (1/2 cup + 1 tbsp) granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 100 g (7 tbsp) unsalted butter, melted
  • 1 tbsp cornstarch

Instructions

For the Dough

  1. Preheat your oven to 340°F (170°C), top and bottom heat.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, sugar, and salt.
  3. Add the egg and cubed butter, then knead everything into a smooth dough.
  4. Divide the dough into 2/3 and 1/3 portions.
  5. Press the larger portion into the bottom and sides of a greased 10-inch springform pan.

For the Filling

  1. In a mixing bowl, combine quark (or yogurt), cream cheese, sugar, vanilla extract, eggs, melted butter, and cornstarch.
  2. Mix until smooth and creamy.
  3. Pour the filling into the prepared crust and smooth the top.
  4. Crumble the remaining 1/3 of the dough over the top of the filling.
  5. Bake for 50 minutes.
  6. Let the cheesecake cool completely, then chill in the fridge before serving.
