Ingredients

  • 2 large Granny Smith apples
  • 1 (12 oz) package semi-sweet chocolate chips
  • 1 tablespoon coconut oil (or shortening)
  • 1/2 cup caramel bits or wrapped caramels (melted)
  • 1/4 cup chopped pecans
  • White chocolate or dark chocolate for drizzling (optional)
  • Wooden popsicle sticks

Instructions

  1. Line a baking sheet with parchment or wax paper.
  2. Slice apples into thick rounds and remove seeds or core parts with a small cookie cutter or knife.
  3. Insert popsicle sticks into each slice and pat dry with a paper towel.
  4. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  5. Dip each apple slice into melted chocolate, covering both sides, and lay on the prepared sheet.
  6. Drizzle melted caramel over chocolate-coated apple slices.
  7. Sprinkle chopped pecans over the top.
  8. If desired, drizzle with white or dark chocolate.
  9. Place the tray in the fridge for about 15–20 minutes or until set.
  10. Serve chilled or at room temperature.
