Ingredients

  • 1½ pounds flank steak
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup corn kernels (fresh or grilled)
  • ¼ cup red onion, finely diced
  • ¼ cup blue cheese crumbles
  • ¼ cup ranch or blue cheese dressing

Instructions

  1. Preheat grill or skillet over medium-high heat and brush with olive oil.
  2. Season the flank steak with salt and pepper.
  3. Grill for 4-5 minutes per side, or until desired doneness. Let rest for 10 minutes.
  4. Chop the steak into bite-sized pieces.
  5. In a large bowl, combine lettuce, cherry tomatoes, avocado, corn, red onion, and blue cheese.
  6. Add the chopped steak and drizzle with dressing.
  7. Toss gently to combine and serve immediately.
