Ingredients

  • 1 deep-dish pie crust, pre-baked
  • 4 medium ripe tomatoes, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chopped green onions
  • 1/2 cup chopped fresh basil
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice tomatoes and sprinkle with salt. Let them drain on paper towels for 10 minutes to remove excess moisture.
  3. Layer the tomatoes into the pre-baked pie crust. Sprinkle pepper, chopped green onions, and basil over the tomatoes.
  4. In a bowl, mix the mozzarella, cheddar, and mayonnaise together.
  5. Spread the cheese mixture evenly over the top of the pie.
  6. Bake for 30-35 minutes or until the top is golden and bubbly.
  7. Cool slightly before slicing and serving.
