Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 6 strips bacon, chopped
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated parmesan cheese
  • 1 pound shelf-stable potato gnocchi
  • 1 cup baby spinach

Instructions

  1. In a large skillet over medium-high heat, cook the bacon until crispy. Remove and set aside on a paper towel-lined plate.
  2. Add the chicken to the same skillet. Season with garlic powder, onion powder, salt, and pepper. Cook until golden and cooked through, about 5-7 minutes.
  3. Push the chicken to one side of the skillet and melt the butter. Pour in the cream and chicken broth, stirring to combine.
  4. Add the gnocchi and bring to a gentle simmer. Cook uncovered for about 5 minutes, stirring occasionally, until the gnocchi is tender and the sauce thickens.
  5. Stir in the parmesan cheese, spinach, and cooked bacon. Cook for another 2 minutes until the spinach wilts.
  6. Remove from heat and serve warm.
