Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 3/4 cup breadcrumbs (plus extra for coating)
  • 2 large eggs
  • 2 garlic cloves, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Oil for frying

Instructions

  1. Steam or blanch broccoli until tender, then chop finely.
  2. In a bowl, combine broccoli, cheddar, parmesan, breadcrumbs, eggs, garlic, salt, pepper, onion powder, and paprika.
  3. Mix well and shape into bite-sized balls.
  4. Roll balls in additional breadcrumbs to coat.
  5. Heat oil in a deep skillet or fryer.
  6. Fry balls in batches until golden brown and crispy, about 2–3 minutes each.
  7. Drain on paper towels and serve warm.
