Ingredients

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp chopped parsley (optional)
  • 1/2 cup plain yogurt or sour cream
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • Salt to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, water, paprika, garlic powder, salt, and black pepper to form a smooth batter.
  3. Dip each cauliflower floret into the batter, coating well, then place them on the prepared baking sheet.
  4. Drizzle the florets with olive oil and bake for 25–30 minutes, flipping halfway through, until golden and crispy.
  5. Meanwhile, mix yogurt or sour cream, minced garlic, lemon juice, and salt in a small bowl to make the garlic sauce.
  6. Serve the baked cauliflower bites hot with the garlic sauce on the side. Garnish with parsley if desired.
