In a medium bowl, combine the flour, salt, yeast, and water. Mix until a shaggy dough forms. Cover and let rest for 12 to 16 hours at room temperature.
Drizzle 1 tablespoon olive oil into a 9" or 10" cast-iron skillet or round cake pan. Transfer the dough into the pan, turning to coat in oil. Flatten gently to the edges and cover for 2 hours.
Preheat oven to 450°F (232°C). Press dough to the edges again if needed.
Top with cheese, then sauce, then desired toppings.
Bake for 18 to 22 minutes, until cheese is bubbly and crust is golden brown.
Let cool for 5 minutes before slicing and serving.
