Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Toss the cut potatoes in olive oil, salt, and pepper until evenly coated.
Spread fries in a single layer on the baking sheet and bake for 25–30 minutes, flipping halfway through, until golden and crisp.
In a small pan, melt butter over low heat. Add minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn.
Remove fries from the oven, place them in a large mixing bowl, and toss with garlic butter, Parmesan, and parsley.
Serve immediately with your favorite dipping sauce.
