Ingredients

  • 4 medium russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place each potato between two wooden spoons or chopsticks and slice thin slits across the potato without cutting all the way through.
  3. Mix melted butter, olive oil, and garlic in a small bowl.
  4. Brush each potato with the butter mixture, making sure to get between the slices.
  5. Season with salt and pepper.
  6. Bake for 45-55 minutes, basting occasionally with more butter mixture until crispy and golden.
  7. Sprinkle with fresh parsley and Parmesan cheese before serving, if desired.
