Ingredients

  • 1 lb chicken tenders
  • 1 large egg
  • 1/4 cup mayonnaise
  • 1 cup crushed pork rinds
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking spray or oil for baking

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the egg and mayonnaise until smooth.
  3. In another bowl, combine crushed pork rinds, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. Dip each chicken tender into the egg mixture, then coat in the pork rind mixture.
  5. Place coated tenders on the prepared baking sheet and spray lightly with oil.
  6. Bake for 25 minutes, flipping halfway through, until golden and cooked through.
  7. Let rest for 5 minutes before serving.
