Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix mashed potatoes, cheese, bacon, green onions, garlic powder, salt, and pepper.
  2. Scoop out small portions and roll them into balls.
  3. Coat each ball in flour, dip in beaten eggs, and roll in panko breadcrumbs.
  4. Heat oil in a deep pan over medium-high heat.
  5. Fry the potato balls in batches until golden brown and crispy, about 2-3 minutes per side.
  6. Remove and drain on paper towels.
  7. Serve warm with your favorite dipping sauce.
