Ingredients

  • 1 1/2 pounds cod or white fish fillets, cut into strips
  • 1/2 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons Dijon mustard
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon paprika
  • 2 cups Panko breadcrumbs
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Lightly grease with cooking spray.
  2. Set up three shallow bowls: one with flour, salt, and pepper; one with the eggs, mustard, mayo, and paprika whisked together; and one with Panko.
  3. Dip each fish strip first in the flour mixture, then the egg mixture, and finally coat with Panko.
  4. Arrange the coated fish sticks on the prepared baking sheet and lightly spray the tops with cooking spray.
  5. Bake for 16-20 minutes or until golden and crispy, flipping halfway through baking.
  6. Serve warm with tartar sauce or your favorite dipping sauce.
