Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. Place flour in another dish and beaten eggs in a third dish.
  4. Dredge each chicken breast in flour, then dip into eggs, and coat with the Parmesan mixture.
  5. Heat olive oil in a skillet over medium heat. Cook chicken for 2-3 minutes per side until golden.
  6. Transfer to the prepared baking sheet and bake for 15-20 minutes or until cooked through.
  7. Serve warm with a side of vegetables or pasta.
