Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow dish, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
Place flour in another dish and beaten eggs in a third dish.
Dredge each chicken breast in flour, then dip into eggs, and coat with the Parmesan mixture.
Heat olive oil in a skillet over medium heat. Cook chicken for 2-3 minutes per side until golden.
Transfer to the prepared baking sheet and bake for 15-20 minutes or until cooked through.
Serve warm with a side of vegetables or pasta.
