Ingredients

  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2-3 tbsp vegetable oil (for frying)

Instructions

  1. In a large bowl, combine mashed potatoes, egg, flour, Parmesan, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into 8 patties of equal size.
  3. Heat oil in a large skillet over medium heat.
  4. Cook the patties in batches for 3-4 minutes on each side until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to drain excess oil.
  6. Serve warm with sour cream, ketchup, or your favorite dipping sauce.
