Ingredients

  • 2 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Boil potatoes in salted water for 10 minutes until slightly tender. Drain and let steam dry.
  3. In a bowl, toss potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  4. Spread potatoes on the baking sheet and roast for 40-45 minutes, flipping halfway through.
  5. Sprinkle with fresh rosemary and parsley before serving.
