Boil potatoes in salted water for 10 minutes until slightly tender. Drain and let steam dry.
In a bowl, toss potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
Spread potatoes on the baking sheet and roast for 40-45 minutes, flipping halfway through.
Sprinkle with fresh rosemary and parsley before serving.
