Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Clean the pumpkin seeds by removing pulp and rinsing under cold water. Pat dry thoroughly with a towel.
Place seeds in a bowl. Add olive oil, salt, and any desired spices. Toss to coat evenly.
Spread seeds in a single layer on the prepared baking sheet.
Roast for 12–15 minutes, stirring once halfway through, until golden and crispy.
Cool completely before storing in an airtight container.
