Ingredients

  • 1 pound dry pinto beans, rinsed and sorted
  • 6 cups water
  • 1 yellow onion, diced
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon kosher salt (add after cooking)
  • Optional: diced ham or bacon for added flavor

Instructions

  1. Rinse and sort the pinto beans to remove any debris.
  2. Add the beans, water, onion, garlic powder, onion powder, chili powder, and cayenne pepper to a crock pot.
  3. Cover and cook on low for 8–10 hours or until the beans are soft and fully cooked.
  4. Once cooked, stir in the kosher salt to taste.
  5. Serve warm as a main dish or as a hearty side.
