Season pork chops with salt and pepper on both sides.
Place them in the bottom of the crock pot.
In a bowl, mix together cream of chicken soup, dry onion soup mix, and chicken broth.
Pour the mixture over the pork chops.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
In the last 30 minutes, mix cornstarch with water to make a slurry and stir into the crock pot.
Cook uncovered for the last 30 minutes until the sauce thickens.
Garnish with parsley before serving if desired.
