Place the chicken breasts in the bottom of your crockpot.
In a bowl, mix together the barbecue sauce, pineapple chunks, pineapple juice, soy sauce, garlic powder, and ginger.
Pour the mixture over the chicken in the crockpot. Season with salt and pepper.
Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
Serve over rice and top with green onions if desired.
