Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 can (20 oz) pineapple chunks, drained (reserve 1/4 cup juice)
  • 1/4 cup reserved pineapple juice
  • Salt and pepper, to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Cooked rice, for serving
  • Chopped green onions, for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of your crockpot.
  2. In a bowl, mix together the barbecue sauce, pineapple chunks, pineapple juice, soy sauce, garlic powder, and ginger.
  3. Pour the mixture over the chicken in the crockpot. Season with salt and pepper.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  5. Serve over rice and top with green onions if desired.
