Cut the mozzarella sticks in half and freeze for at least 2 hours until solid.
Prepare a dredging station with three shallow bowls: one with flour, one with beaten eggs and milk, and one with a mix of both types of breadcrumbs and seasonings.
Coat each cheese stick in flour, then egg, then breadcrumbs. Repeat the egg and breadcrumb coating for extra crunch.
Place breaded sticks on a tray and freeze for another 30 minutes.
Preheat the air fryer to 390°F. Lightly spray the basket with cooking spray.
Arrange mozzarella sticks in a single layer. Air fry for 5–6 minutes or until golden and crispy. Do not overcook.
Let cool for 1–2 minutes before serving with marinara or your favorite dipping sauce.
