Ingredients

  • 2 (10 oz) packages frozen chopped spinach, thawed and drained
  • 1 ½ cups stuffing mix (like Stove Top)
  • 4 large eggs, lightly beaten
  • ½ cup unsalted butter, melted
  • ½ cup grated Parmesan cheese
  • 1 small yellow onion, finely chopped
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine all the ingredients: spinach, stuffing mix, eggs, melted butter, Parmesan, onion, garlic powder, salt, and pepper.
  3. Mix until fully combined. Let the mixture rest for 10 minutes so the stuffing mix absorbs the moisture.
  4. Shape into 1-inch balls using your hands or a small cookie scoop.
  5. Place the spinach balls on the prepared baking sheet.
  6. Bake for 20–25 minutes, or until golden brown and set.
  7. Serve warm with your favorite dipping sauce or enjoy as-is!
