Ingredients

  • 1 pound dried beans (any variety)
  • 6 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions

  1. Rinse and soak the dried beans overnight, then drain.
  2. In a large pot, heat olive oil over medium heat. Sauté onion, garlic, carrots, and celery until softened.
  3. Add the drained beans, water, diced tomatoes, and all seasonings, including the bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, stirring occasionally, until the beans are tender.
  5. Remove the bay leaf and serve hot.
