Ingredients

  • 5 oz baby arugula
  • 1 cup fresh blackberries
  • 1 ripe avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped pistachios (optional)
  • 1/3 cup crumbled vegan feta or regular feta cheese
  • 1 tbsp fresh mint, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper to make the dressing.
  2. In a large salad bowl, combine arugula, blackberries, avocado slices, cucumber, red onion, and mint.
  3. Drizzle the dressing over the salad and gently toss to combine.
  4. Top with chopped pistachios and crumbled feta. Serve immediately.
