Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups cooked chicken breast, shredded
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup ricotta cheese
  • 1 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup shredded mozzarella cheese, for topping
  • 2 tablespoons grated Parmesan cheese, for topping

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant, about 1 minute.
  3. In a large bowl, combine the chicken, spinach, ricotta, sour cream, mozzarella, Parmesan, salt, pepper, and nutmeg.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle the top with remaining mozzarella and Parmesan cheese.
  6. Bake uncovered for 25 to 30 minutes, or until bubbly and golden on top.
  7. Let cool slightly before serving.
