Ingredients

  • 2 cups cooked and shredded chicken
  • 8 ounces spaghetti, cooked and drained
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large pan, heat olive oil over medium heat and sauté onions and bell peppers until soft.
  3. In a mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, black pepper, salt, paprika, and diced tomatoes with green chilies.
  4. Add the cooked spaghetti to the mixture and stir until well combined.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle cheddar cheese and mozzarella cheese on top.
  7. Bake for 25-30 minutes until the cheese is melted and bubbly.
  8. Let it rest for 5 minutes before serving. Enjoy!
