Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups vanilla ice cream, softened

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until creamy. Add egg and vanilla; beat until combined.
  4. Gradually mix in dry ingredients until a dough forms.
  5. Scoop dough into small balls and flatten slightly. Place on baking sheets.
  6. Bake for 8-10 minutes. Let cool completely.
  7. Scoop softened ice cream onto one cookie, top with another to form a sandwich.
  8. Wrap each sandwich in plastic wrap and freeze until firm, about 2 hours.
