Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 cup sliced almonds
  • 1 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
  3. Beat eggs with peppermint and vanilla extracts, then add to dry ingredients.
  4. Stir in almonds and chocolate chips.
  5. Divide dough in half and shape into two logs on the baking sheet.
  6. Bake for 25-30 minutes until golden. Let cool slightly.
  7. Slice logs into 1/2-inch slices and lay flat on the baking sheet.
  8. Bake for another 8-10 minutes per side until crisp.
  9. Cool completely before serving or storing.
